酸辣豆瓣酱煮Patin 鱼 - Sour and Spicy Ikan Patin in Salted Bean Paste Sauce

时常吃素,也吃得有点腻。
不如换换口味,吃些鱼。
我选了大家都说它很腥的Ikan Patin ,它的头有点像鲨鱼。
唔,这鱼要怎样煮呢?
想了一会儿后,我决定用姜茸( minced ginger )、大葱碎( chopped onion ),朝天椒( chilli padi ),豆瓣酱(salted bean paste ), 豆豉( dou chi )和罗望子( Assam Jawa,tamarind)煮成酱汁,再放Patin 鱼下去煮熟,就不用煎了。
要上碟时,用糖来平衡它的咸和酸,这样够开胃了吧?
