C likes to eat marble cake.
She might like Chocolate Marble Chiffon Cake as well , I guess.
This is my first attempt to make a Chocolate Marble Chiffon cake and it is for C .Luckily, it was successful and the cake looked presentable .
Also, a "special written " recipe.

蛋白乳沫 + 巧克力蛋糊
Egg white mixture + chocolate egg yolk batter

Egg white mixture + plain egg yolk batter .
Egg white mixture + plain egg yolk batter .
材料 ( Ingredient):
(A)
6 egg yolks 蛋黄 ( 取自from a 30g egg )30g caster sugar 细糖
(B)5o ml corn oil 玉米油 + 70 ml water 水
(C)
90 g flour 面粉+ 1 tsp baking powder 发粉(泡打粉) ( or using self raising flour或用自发面粉)
(D)
10 g cocoa powder可可粉 , 要加进(+ for egg yolk batter E )---蛋黄面糊 E)
10 g flour 面粉 + 要加进 (+ for egg yolk batter F )---( 蛋黄面糊 F)
(G )
6 egg whites 蛋白
30 caster sugar 细糖
¼ tsp Cream of tartar (optional ) 塔塔粉( 可用可不用)
最后 + 10 or 15g corn flour (玉米粉)
制做程序:
1. 用搅拌器将(蛋黄+ 糖的 A) 打至奶油状,5分钟 + ( B ) 用汤匙搅拌均匀。
2. 筛入(C) 的面粉。 将蛋黄面糊分为2份相同的部份 – 蛋黄面糊 E 和蛋黄面糊 F。
3. + 10 g 可可粉 + 蛋黄面糊E。
4. + 10 g 面粉 + 另一份蛋黄面糊 F。
5. 开启烘炉摄氏 170 C 或180 C。( 我自己的烘炉是用摄氏180 C )
6. 准备蛋白乳沫(egg white mixture):
先将纯蛋白打2分钟+ 塔塔粉+ 细糖。再打3分钟 + 玉米粉,再打均匀。
7. 将蛋白乳沫平均分为2部份:
一部份蛋白乳沫 + 可可蛋黄面糊----搅拌均匀。(如:图2)
另一部份蛋白乳沫 + 纯蛋黄面糊----- 搅拌均匀。(如:图3)
8. 将两部分黑白的混合料间隔放进烘盘里,弄成大理石状。(如图 4: ) , 然后放进预热烘炉只用下火烘焙30分钟,等chiffon cake 上升后,再调低温度到170 C , 开启上下火烘10分钟或上面呈金黄色为止。
8. 倒扣模子。待冷后取出。( 时间大约1 小时。但,我用风扇吹,大概1/2 小时)。
Chocolate Marble Chiffon Cake :
Method:
1. Beat egg yolk + sugar ( A )for 5 minutes with mixer + (B) and mixed well with spoon.
2. Fold in flour (C) .
Divide the egg yolks mixture into two equal portion : Egg yolk Batter (E ) and egg yolk batter (F).
3. + 10g cocoa powder + egg yolks batter ( E). ( Photo 2)
4. + 10g flour + plain egg yolks batter ( F ) . (Photo 3 )

5. Switch on the oven to 160, 170 or 180 C. ( I use 180 C for my own oven.)

6. Prepare egg whites mixture (G ) : Beat the egg white for 2 mins + cream of tartar ( optional ) + sugar . Beat for an another 3 mins + corn flour. Mix well.
7. Divide egg whites mixture into 2 portions :
Fold in half of the egg white mixture +cocoa egg yolk batter.
Fold in the other half of the egg white mixture + plain egg yolk batter .

8. To create the marble effect ( Photo 4 ):
Alternatively scoop the plain and chocolate mixture into the chiffon cake pan.
Bake in the preheated oven at: 180 C lower heat , to let the cake rise , for 30 mins .
Then , minus 10 degree ( 170 C ,here ) turn to upper and lower heat , for 10 mins or the top turns golden in colour .
9. Invert the cake immediately .Remove the cake from the pan when it's completely cool . It takes about 1 hour .( But it took only 1/2 hour when I switched on the fan .)
